Quinoa Tabbouleh

Quinoa is a nutritional powerhouse. Its gluten-free, high in protein and one of the few plant foods that contain all nine essential amino acids. Quinoa is also high in fiber, magnesium, B vitamins, iron, potassium, calcium, phosphorus, vitamin E and contains tons of antioxidants.

Enjoy this nutrient-packed Lebanese inspired salad as a delicious and healthy lunch or as a side to your favourite meat or fish dish. 

Ingredients:

100g dried quinoa 
1/2 cucumber chopped 
2 spring onions chopped 
Small bunch mint leaves chopped 
Small bunch parsley leaves chopped
Cup cherry toms (quartered)
Juice 1 lemon 
Salt and pepper for seasoning 

Method:

Boil the quinoa as per packet instructions
Squeeze in juice 1 lemon
Add chopped tomatoes, cucumber and spring onions and herbs and stir well.
Season with salt and pepper.

Serve alongside your favorite meat, fish or vegetable dish.
