Who does not love avocado? The creamy, delicious fruit that is packed with vitamins, omega 3 fatty acids and also a great source of potassium. This quick and easy guacamole makes for the perfect snack, party appetiser or a great addition to any Mexican dish.
2 large ripe avocados
Juice 1 lime
1/4 Red Onion
Large Clove Garlic
Tbsp Olive oil
10 Baby plum tomatoes
Small bunch coriander (10 Sprigs)
1/2 Small Chilli
Salt and pepper for seasoning.
Wack all ingredients in a blender and pulse until smooth or less for a chunky dip. Its that simple.
Serve with homemade tortilla chips- Cut tortilla wraps in to 8 sections and cook in oven for 10 mins until golden brown.
